A superb knife at a great valueJan 14, 2011
By pierhogunn After watching Alton Brown sing the praises of granton edged slicing knives I started considering adding one to my humble collection of kitchen tools... I had 3 things I was looking for before I purchased this knife
1. Had to be inexpensive 2. Had to be dishwasher safe ( just in case one of my non-foodie relatives stuck this thing in the dishwasher) 3. Didn't have to be premium quality
This knife met all of these requirements
Once the knife arrived ( on Chistmas Eve while the target beast was already roasting away in the oven) I took it out, washed it, honed it, and started answering questions from my puzzled guests as to why I would want/need such a long knife when I had a perfectly serviceable chef's knife...
3 hours later, after I cut the ribs off the roast, I showed them.
This blade cut through the Rib roast like it was softened butter, I did not feel the same tug and pull when slicing through the meat like I do when I use my slicing knife, or even my chef's knife...
The cuts them selves were smooth, and left the cut surfaces of the roast smooth, and beautiful, the length of the knife meant that only one change in direction was needed to complete each cut. I am sure that if I used more downward pressuer while cutting, I could have made it through the roast in a single direction, but I was new to this knife and wanted to maintain control.
Those little indentions on the blade, and the thinness of the blade made a world of difference. I now use this for the home made canadian bacon that I make on a regular basis, and it is very easy to get slices that are uniform thickness over and over again. Again, I am a novice, with no training and I am getting fantastic results with this knife
I would reccomend this knife to anyone who wants to add a good tool to their kitchen, that they will reach for over and over again... so much so that I have almost sworn off ever going to my electric knife for anything...
as a matter of fact, I have a nice electric knife that may be for sale shortly.
The White plastic handle was also an ergonomic improvement over the hard black resin handle of my older knives, so even when my hands were covered in juice from the roast, I was still able to maintain control of the blade and slice off uniform servings.
