I purchased several models over a couple of weeks at the local stores till I finally bought this one online. This is the one to buy. The 3 sharpening wheels do a great job on even the toughest blades. I was able to change the angle on a titanium blade to the proper 20 degree cutting angle that the manufacturer choose to ignore. I really cuts welll now. Also I have been able to sharpen all of my S30v and 154cm steel tactical knives to perfect precision. Chef's Choice makes great products but the absolute best is the 120 model.

When I got married six years ago, we got a set of Chicago Cutlery knives. Up until then, I never knew what a pleasure using something other than cheap serrated steak knives could be. With time and experience, I have realized that they were on the cheaper end of knives but they worked just fine for my cooking skills. However, they eventually lost their edge and no amount of steeling them could bring them back. I bought a couple hand held sharpeners but none of them worked to bring them back to life. A couple years ago after reading many reviews on here, I bought a set of diamond honing blocks because that is what all the really "serious" cooks seem to say obtained the best results in the reviews. I'm sure they probably do work but it is very difficult to obtain the proper angle and I spend lots of time and remove lots of metal and still only end up with a knife that is slightly sharp. I needed something that was easier and most importantly, more consistent to use but had up until now, been scared of the cost of one of these electric sharpeners. After much searching and with much trepidation after reading some of the negative reviews, I bought the Chef's Choice 120. Since many reviews stated the importance of reading the manual, I did, every word. After doing so, it became clear as to why it is important to do so because it walks you through sharpening a knife in very easy to follow and specific directions and it takes all of five minutes to read cover to cover. Then I took out my dullest of my cheap Chicago Cutlery knives that we never use and went through the procedure. It came out razor sharp. Ten minutes later I had every knife in the house including three very dull pocket knives sharpened and couldn't believe how pleasurable they were to use again. This purchase has been one of the best I've made on here in awhile and certainly worth every penny. I just wished I had bought it first instead of wasting all that money on hand held gadgets that didn't work.

1The sharpener that can't!Aug 07, 2010
This was my second attempt at trusting a chef's choice knife sharpener and was my second time being completely disappointed. This sharpener does "ok" on kitchen knives. Not great but ok. But it claims to be able to sharpen hunting knives and other outdoor type of knives and it does not!!! It can only handle knives with a thin blade that has flat sides to it. Thicker blades or any blade that's not a full flat grind will not sit properly in the guides. Save your self the trouble of having to return this product and buy the KnifeMaster Pro Sharpening System. Not only can you do ANY knife, but you can also sharpen anything that needs sharpening like chisels, lawn mower blades and so on. As far as kitchen knives go, any pull through sharpener will give you a nice cutting knife for the kitchen for around 20 bucks. Buy yourself something nice with the one hundred dollars your save.

I would rate this sharpener as the best and easiest one I have have ever used. I am tight with a buck and like to get my money worth from a product. After doing a lot of research on this and discussing it we finally decided to order it. When it arrived I took the time to read the instructions then my wife and I tried to see how good it would do on a knife. After a few strokes in on each side of the blade we tested the sharpness and were impressed. We gathered all the knives in the kitchen and in short order had all of them sharpened.I like how I could even sharpen my pocket knife with ease and how it sharpened the whole blade. I am impresses on how it keeps the knife guided to get the same angle on it every time and the knives seem to hold an edge better now. We own a working farm and have a huge garden and we process our own meat from that animals we raise so our knives get a workout. This is our best friend in the kitchen !!!

I've had our 120 for over a year now and couldn't be more pleased. I can't imagine having a sharper edge on our knives -- as it is, we warn our house guests about the sharpness if they'll be doing anything in the kitchen.
