couldn't be happierMar 07, 2010 Our neighbor has a Chef's Choice M130 and after taking all my kitchen knives to him, I knew I had to have one. Now some of my neighbors come over here to use mine in the same manner. Once you see it in action - you get hooked! I even did my flatware knives; not to a razor edge, but to a more useful edge.

Easy to use! Knives are like newMar 02, 2010 I've have my Wusthof knives for about a year and they were getting more and more difficult to keep sharp by steeling. I used the three step process with this sharpener and they are as sharp as new. I also sharpened some older knives which I had given up on and they are usable now too. Keep this sharpener on the counter to use as a steel. It seems to do a much better job than the handheld ones.
AMAZINGFeb 26, 2010 I received this knife sharpener for my birthday and my whole family was skeptical about whether or not it would work. Within minutes I revitalized my old knife set, and over the next few days my whole family brought me all their knives! It works like a charm! It's fast, easy, and works beautifully. My old knives would barely cut anything anymore and after a quick run through the sharpener, I barely have to add any pressure to slice through ANYTHING. This sharpener is worth every penny!
Wished I'd gone with the 120Feb 22, 2010 This is an excellent sharpener and created a great edge that slices paper easily. While the edge that it makes pops a few of my hairs on my arm, I would not call it shave sharp.
I got this sharpener last week and quickly sharpened all of my kitchen knives. I was not able to sharpen a large cleaver because it did not fit into the slot (my grandfather was a butcher), but all of my other knives sharpened easily and quickly. Make sure you look at the picture in the manual regarding the creation of the burr. Making a proper burr is essential to getting a very sharp knife with this system.
According to the manual, using their "steel" will not make a sharper edge than the third stage polish wheel.
I took my sharpener to my grandmothers this weekend to sharpen her knives, and this is where I realized I should have paid less for the 120. The 130 replaced the first cutting wheel with the manual steel hone. With my grandmothers knives, I wished I had the first cutting wheel.
Since the manual recommends using the steel or the third polishing stage but not both, I would recommend 120 for the first cutting wheel. Those that really must have the steel, go with the manual 470 for an extra $6.44. Better yet, go with a real steel and learn how to use it.
