Useful Item for Homemade PizzaApr 27, 2011

I never before heard of a Pizza Docker, until I saw it used in a "How TO" Pizza making video on Youtube. I like thin, crispy crust homemade pizza. Tried several recipies I found online, but one recommended using a Pizza Docker, to puncture the dough when it is on the Pizza pan, before cooking. This helps keep the dough from rising during baking too much. I make the Pizza Dough, put it on the pizza pan, Dock it throughly (not the lip of the pizza, just the primary area), and quick bake just the dough for 12 minutes. After the dough is cooked and almost crispy, I remove it from oven, let it cool, lightly, very lightly brush with Olive Oil, to prevent the sauce and veggie toppings from making the crust soggy while cooking. Then put on your toppings, veggies last. I also microwave the Pepperoni slices on papertowels on a med heat in the microwave for a few brief minutes, to wick off much of the fat, that will make a pizza greasy, and soggy. This Pizza Docker is easy to handle, easy to clean, and has a lot of points to quickly dock the dough, before cooking. I consider it a necessary step, for thin, crispy crust pizza. There are Youtube videos on how and why to use a Pizza Docker. Check them out before purchase.

By J. BURGESON Using this device will give your pizza an almost cracker-thin crust. It puts little holes in the dough that will keep it from puffing up. It's larger than I thought it would be, though, so make sure the drawer in your kitchen for things like this is big enough. It's made of rugged plastic, and it looks like it'll last for decades.

I bought this for my husband who makes homemade pizza every Friday. After watching him very energetically pricking the Fresh and Easy brand pizza dough with a regular fork, I asked if he'd be interested in a dough docker, to which he just as energetically said "Yes!" It arrived by the following Friday and my husband is very pleased with it. We store it in a stainless steel tool caddy on the kitchen counter, so size is not a problem. It went into the top rack of the dishwasher and came out beautifully - no problems with any of the plastic melting or warping.

If you enjoy thin-crust pizza (and who doesn't?), this little gadget is indispensable. It makes rows of small indentations (almost holes, hence the title of this review). You can roll your dough cracker thin, run the docker over it, and bake to perfection. It is a great addition to a pizza-oriented kitchen and it is useful for making flat breads, too. I have see this used in pizza "parlors" here in town and decide to buy one. It works just like its supposed to and helps make the dough easy to work with.
