Sushi Dinner Tonight!!!Aug 31, 2010 I love this book sooo much! It is the best sushi book I own and the recipe for sushi rice by far eclipses the other books recipes.
I have to always keep an eye on the rice in my house because my family down it before I can even get to making rolls. This book
is definitely my go to sushi book it make everything simple and easy and is great for beginners. I received this book years ago and
it is still my favorite.
Good BookJan 05, 2010 This is my first book about sushi. It is well organized, with lots of nice pictures. It is good for beginners (like me). There are not so many recipes inside. However everything is well explained and shown step by step. Anyhow it is a good book with hardcovers, nice printings and good explanations.
Sushi: Taste and TechniqueJun 15, 2009 This is an excellent book, for the beginner and experienced alike.
It has great pictures and clear illustrations on everything from the first step through to the last.
There are a great selection of recipes included along the way for all tastes and desires of sushi lovers. Including dessert!
Loved the book!!!!
A must-read for anyone who makes &/or eats sushiJan 06, 2009 The description of the process a person must undergo in Japan before becoming a full-fledged master sushi chef gives one a greater appreciation of this most Japanese of foods.
Ian O'Leary's photography is superb and mouthwatering, and because each step of the recipe is accompanied by a photo, it makes following the recipe seem almost effortless/idiot-proof. The book includes an explanation of the types of ingredients, especially fish, which are used, as well as each implement that is necessary, including possible substitutes.
As expected of DK Publishing, this is a book that visual learners will love. Kimiko Barber's clear and spare prose makes quite a difference in encouraging nonprofessionals such as myself to attempt to make sushi. Hiroki Takemura-sensei's expertise and love for his craft is evident in the pictures.
In a time when it is so easy to pull out recipes from the internet, this remains one of my few cherished cookbooks.
SUSHI: TASTE AND TECHNIQUE by Kimiko Barber and Hiroki TakemuraOct 13, 2008 Sushi: Taste and Technique is Kimiko Barber's and Hiroki Takemura's guide to preparing, presenting and eating sushi. The book is thoroughly illustrated, and features photography by Ian O'Leary on nearly every page.
Sushi is thorough in every area. It gives a brief history of sushi, and information on the equipment and ingredients for sushi preparation. There are simple, easy-to-follow recipes on how to prepare sushi ingredients like omelets and soboro, and there is amazing coverage of the different fish, squid, octopi and oysters used for sushi, and how to cut and prepare each of them. The book also gives very detailed instructions on how to assemble scattered, stuffed, pressed, rolled, and hand-formed sushi. The book concludes with information on eating at a sushi bar, sushi etiquette, and other tidbits.
If you're looking for a book on sushi, it's hard to imagine one better than this.
